Horchata

Horchata

1c long grain rice
2 cups water
1t vanilla
1t cinammon
1/2c sugar
2 cups cold water
1can evaporated milk

Soak the rice in 2 cups of water for one hour.  Place the rice and its water in a blender along with the vanilla, cinnamon and sugar.  Blend the mixture for 1 minute, and then pulse for another 40 seconds.  Strain into a pitcher.  Add 2 cups of cold water and the evap milk.  Stir well and serve over ice.
