Texas Sheet Cake

Texas Sheet Cake

2 cubes butter
1c water
4T cocoa

2c sugar
2c flour
1/2t salt
1t baking soda

1 cup sour cream or 1/2c buttermilk
2 eggs
1t vanilla
1t cinnamon (optional)

Frosting:

1 cube butter
4T cocoa
6T evaporated milk or half & half
3 1/2c powdered sugar
1c nuts (optional)
1t vanilla

In a stockpot on the stove, bring butter, water and cocoa to a boil. Remove from heat.  Add flour, sugar, salt, soda. Mix with hand mixer until smooth.  Add sour cream, eggs and vanilla.  Mix well.  Spread onto greased sheet pan.  Bake on middle oven rack at 350 for 20 min. Use a toothpick to determine if cake is done.  DO NOT OVERBAKE!

Cooked Frosting: Bring butter, cocoa and milk to boil  Add powdered sugar. Mix well with hand mixer.  Add nuts and vanilla.  Spread onto cake while still warm. 

Non-Cooked Frosting: Mix softened butter (can melt in the microwave for 15-20 seconds) and cocoa first.  Add powdered sugar, milk and vanilla.  Mix well with hand mixer until smooth and creamy. Spread on top of cooled cake.
